Why not Saffron Bistro’s cousin 11Eleven Bistro, a new executive chef Joe Drift establishment on Lowell Street in Manchester.
The 11Eleven Bistro opened in late October in Richard’s Bistro’s former space as a joint venture with partner Jeff Dudley, Drift said.
“He’s the big guy behind this,” Drift said. “It was always Jeff’s dream to open a restaurant, and working for me a long time, he got a sense of what it’s like to create really good food.”
At 11Eleven Bistro, patrons will find a menu similar to Saffron Bistro, but a more casual feel, Drift said.
“This is just a really relaxed atmosphere,” Drift said. “People get to watch us cook. People really like it.”
Although Drift maintains that Nashua is his home, the new Manchester location, complete with new equipment, has allowed Drift to branch out with new meals paired with new wines.
“I have a lot of clientele from Bedford, Manchester and Londonderry, so it’s closer for those people,” he said.
In fact, Saffron Bistro will launch a new menu and wine list this week, he said.
“We bounce the ideas off both places if we think one fits down here or there,” Drift said, “so it’s creating two menus for two places.![]()
